Easy Weeknight Meal - By Elizabeth Heverly

Hi everyone! I wanted to share a recipe with you today that is a family favorite in our home. It’s super simple, doesn’t require too much planning, and perfect for any season really. I usually plan to make it when I know we have a super busy day or at the park or splash pad most of the day.  We lovingly call it “Jay’s and dad favorite cheesy noodles” in our house, but you can also call it Beef and Noodles.
Let’s get right into it! 
Yields-this is enough for two adults and two toddlers, adjust ingredients to your families needs
Ingredients:
1 pound beef
3 cups medium egg noodles
2 cups water
12 ounce velveeta
1/3 cup milk
Prep:
Start browning beef (use a large pot) and cut your cheese into smaller cubes and set aside. 
Drain fat off beef and return to pot, add water, place a lid on the pot and bring water and beef to a boil. 
Once boiling, add your noodles and cover once again. 
When your noodles are soft to your liking, add cheese and milk.
Stir until the cheese is melted, once it is, it’s ready to serve!
